Inspired by my travels.
Peachy Oatmeal Lavender Cookie Bars
A lavender peninsula (8/2/18)
(Makes approximately 20 bars.)
2 cups oats
2 ripe peaches, large
1 ½ cup flour
1 cup packed brown sugar
¼ cup sugar
¼ cup lavender sugar (I use Martha’s Own Lavender Sugar)
1 cup vegetable shortening
¼ cup dark chocolate chips
1 tablespoon culinary lavender (I use B&B Family Lavender Farm’s Angustifolia)
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla extract
Preheat oven to 375 degrees Fahrenheit.
Grease a 13 x 9 inch glass baking dish, and set aside.
Cut up peaches into small pieces, taking care to remove and discard all pit pieces. Set aside.
Measure shortening, sugars, eggs and vanilla into mixing bowl, and blend thoroughly.
Stir in peaches.
Stir in the flour, baking soda and salt, and blend thoroughly.
Stir in oats, culinary lavender and chocolate chips, and blend thoroughly. (Mixture should be very thick.)
Scoop mixture into the greased baking dish and spread evenly.
Bake about 25 minutes, or until toothpick inserted in the center comes out clean (not sticky).
Cut into bars and enjoy! 🍪
